Photo: Tony Vindell\/LFN<\/p><\/div>\n<p style=\"text-align: center;\"><em><strong>by Tony Vindell\/LFN<\/strong><\/em><\/p>\n<p>Three of the Lone Star State\u2019s best barbecue joints are located in the Rio Grande Valley.<\/p>\n<p>One of them, Rio Grande Grill BBQ &amp; Tex-Mex, can be found on Van Buren Street in Harlingen.<\/p>\n<p>Owned by Daniel Wright and Stefania Trimboli-Wright, the eatery serves a variety of meals including popular smoked meats like brisket, chicken, sausage and even smoked fish tacos.<\/p>\n<p>Unlike other barbecue places, this one strictly uses nothing but mesquite wood.<\/p>\n<p>Stefania said they bought the restaurant back in 2013.<\/p>\n<p>\u201cWe pretty much kept everything \u2013 the menu, the recipes and everything else,\u201d she said.<\/p>\n<p>But serving the same items over and over gave her an idea of taking the business a notch up.<\/p>\n<div id=\"attachment_9326\" style=\"width: 310px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-9326\" class=\"wp-image-9326\" src=\"https:\/\/losfresnosnews.net\/wp-content\/uploads\/2018\/11\/IMG_2828.jpg\" alt=\"\" width=\"300\" height=\"381\" srcset=\"https:\/\/losfresnosnews.net\/wp-content\/uploads\/2018\/11\/IMG_2828.jpg 600w, https:\/\/losfresnosnews.net\/wp-content\/uploads\/2018\/11\/IMG_2828-237x300.jpg 237w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><p id=\"caption-attachment-9326\" class=\"wp-caption-text\">Daniel Wright and Butch Witt show off a nice slab of brisket slow smoked overnight in a mesquite fired pit. Photo: Tony Vindell\/LFN<\/p><\/div>\n<p>Trimboli-Wright, who attended culinary school in Austin, said she wanted to use her knowledge in a little more than cooking and serving barbecue day in and day out.<\/p>\n<p>\u201cWe smoke corn, cauliflower and even make our own potatoe chips now,\u201d she said.<\/p>\n<p>\u201cWe also started serving better fish tacos.\u201d<\/p>\n<p>Stefania said they use mahi-mahi, which is tasty salt water fish.<\/p>\n<p>\u201cWe are trying to do something different.\u201d<\/p>\n<p>The restaurant uses locally raised vegetables, and more so now that the city\u2019s farmer\u2019s market has officially opened for the fall and winter seasons.<\/p>\n<p>Rio Grande Grill opens at 11 a.m. Tuesday through Saturday and usually closes at about 3 p.m. or when everything is sold out.<\/p>\n<p>Rio Grande Grill is one of three Valley barbecue joints to be included in Texas Monthly Magazine\u2019s list of the top 50 barbecue places in Texas.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>by Tony Vindell\/LFN Three of the Lone Star State\u2019s best barbecue joints are located in the Rio Grande Valley.
